What Makes Georgian Vineyards Different? Climate, Soil, and Elevation

Georgian wine is often introduced through its history and its winemaking method — 8,000 years of tradition, qvevri fermentation, indigenous grapes. Less often discussed is the physical landscape behind all of it: the specific combination of climate, soil, and elevation that makes Georgia's growing conditions genuinely distinct from most other wine regions American drinkers know. Understanding that landscape explains a lot about why Georgian wine tastes the way it does.
A Country Split by Mountains
Georgia is small — roughly the size of South Carolina — but it's boxed in by the Greater Caucasus mountains to the north and the Lesser Caucasus to the south, with the Black Sea influencing the west and a drier continental climate taking over further east. That geography does a lot of work. The Greater Caucasus range acts as a wall against cold air moving down from Russia, which lets vines in Kakheti, the country's main wine region, ripen fully even though it sits at a fairly northern latitude for red wine production.
This mountain-shielded setup also creates significant day-to-night temperature swings during the growing season — warm days for sugar development, cool nights that preserve acidity. It's the same basic mechanism that makes high-elevation regions elsewhere in the world (parts of Argentina or Northern Italy, for instance) good for structured, age-worthy wine, just achieved through a different geographic arrangement.
Kakheti's Two Valleys
Most of the wine most Americans have tried — from producers like Marani, Mosmieri, and Winera — comes from Kakheti, and specifically from two valley systems within it:
The Alazani Valley, wide, fertile, and relatively low-lying, historically home to larger-scale production and many of Georgia's best-known wineries, including Marani's home base near Telavi.
The Iori Valley, drier and generally at slightly higher elevation, favoring more concentrated, structured fruit.
Even within Kakheti, then, "Georgian wine" isn't one climate story — it's several, layered close together.
Soil: Clay, Limestone, and Alluvial Deposits
Kakheti's soils are a mix, but clay and clay-loam dominate much of the Alazani Valley floor, with limestone and gravel becoming more prominent on higher ground and toward the foothills. This matters practically: clay-heavy soils retain water and tend to produce wines with more weight and structure, while the limestone and gravel sites at higher elevation drain faster and generally push toward brighter acidity and more aromatic lift. Rkatsiteli and Saperavi are planted across both soil types, which is part of why bottles from different producers and different micro-regions of Kakheti can taste meaningfully different even when the label says the same grape.
Elevation as a Style Lever
Elevation across Georgia's wine regions ranges roughly from 1,300 to over 2,500 feet, and producers increasingly treat it as a deliberate style choice rather than an incidental fact of where a vineyard happens to sit. Higher-elevation sites in Kakheti's foothills, and especially in mountainous Racha-Lechkhumi further west, see cooler average temperatures and slower ripening, which tends to favor the more delicate, higher-acid wines associated with grapes like Usakhelauri and Aleksandrouli — the backbone of Khvanchkara. Lower valley-floor sites, by contrast, ripen faster and push toward the riper, fuller style more typical of Alazani Valley Saperavi.
Why Imereti and Racha Taste Different From Kakheti
This same logic explains why regions outside Kakheti produce noticeably different wine even when working with related grapes. Imereti, west of Kakheti, is cooler and wetter with more Black Sea influence, and its winemakers historically developed a different qvevri technique in response — grapes are separated from skins and stems before fermentation, rather than the whole-cluster method common in Kakheti — producing lighter, brighter amber wines. Racha-Lechkhumi, higher and more mountainous still, is where the country's more delicate, semi-sweet red tradition took hold, largely because the climate simply doesn't support the same ripening profile as the valley floor further east.
The Practical Takeaway
None of this is trivia for its own sake. When a Corus Imports producer describes a wine as coming from a specific valley, elevation, or soil type, it's a genuine style signal — not marketing language borrowed from other wine regions. A Kakhetian Saperavi from lower, clay-rich Alazani Valley ground will drink differently than one from a higher, limestone-influenced Iori Valley site, even from producers working in a similar winemaking style.
